Through this online platform, I can write letters to her & post it to cosmos to deliver to her. She loved writing diary for me so that I can revisit and remember my favorite recipes, important contact details, her feelings for me and instructions on how to lead my life when she is not around. Though, it has been 15 years I have survived without her being around but her thoughts are with me every day. So, a thought came along, what can be better than to upload her recipes on this channel to share with the world. As I may not be there forever but her online digital prints will stay forever through this channel. I hope my channel viewers appreciate & encourage my efforts. Though Portugese by roots, Mom's journey was full of Indian Food & Experiences. Mom was a working professional as a hotelier. She never learnt or desired to cook. However, eventually, life is a best teacher. With kids, mom had to learn few basic cooking. Quick as she had to balance her house and work as a single parent. She started cooking as a compulsion while following her daily routine but eventually with her creative cooking, I fell in love with her food, anyone could. I loved all mom's made dishes, especially, Lentil & Rice (Dal Chawal). Mom enjoyed cooking for me, she had a fusion cooking style - all mix of Goan, Portugese, South & North Indian recipes. Every time to cook something special for me, she used to refer recipes from friends, neighbours, relatives, books from her hotel management friends and create her own style. She used to write down these recipes in her diary, a unique special dish for me to remember for life.
